Pasta is always a quick meal, and easy to supplement with veggies. This easy pesto recipe sneaks in spinach along with fresh basil.
Blend or process the pesto and serve over top of pasta of choice (cooked according to package directions. Sprinkle some Parmesan and pine nuts on the top, and serve with a fresh salad and garlic bread.
- 1 1/2 cups fresh spinach
- 3/4 cup fresh basil
- 1/2 cup pine nuts
- 1/2 cup Parmesan cheese
- 2-4 peeled garlic cloves (depending on taste preference)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 TBS fresh lemon juice
- 1/2 tsp lemon zest
- 1/4-1/2 cup olive oil
- Blend or process all ingredients, including 2 TBS olive oil
- Slowly stream in remaining olive oil until desired consistency is reached
